Date Squares (Matrimonial Slice)

You can’t write about dates without this one.

1-1/2 c. chopped pitted dates

1 t. vanilla

1 1/2 c. flour

1 c. packed brown sugar

1 c. old-fashioned oats

1/2 t. cinnamon

1/2 t. baking soda

1/2 t. salt

1/2 c. butter, chilled and cut into bits

Preheat the oven to 350°F. Butter an 8x8-inch metal baking pan. Put the dates in a medium saucepan, add a cup of water and bring to a simmer. Cook until the dates are very soft and thick, stirring them occasionally, about 10 minutes. Cool the mixture to room temperature and stir in the vanilla.

Whisk together the flour, sugar, oats, cinnamon, baking soda and salt in a large bowl. Add the butter and, using your fingertips, rub it in until moist clumps form. Press half of the oat mixture evenly over the bottom of the prepared pan. Spread the date mixture over top. Sprinkle the dates with the remaining oat mixture; press it down gently so it adheres. Bake the squares for 35-40 minutes, until the top is golden around the edges and set in the middle. Cool in the pan on a wire rack, then cut into squares. Makes 16 squares.
