Margie s Chipotle and Roasted Garlic Mayo

This invention of Margie Gibb, co-owner of Caffè Beano, is the ultimate “special sauce”, the best burger condiment I know of, but it’s also great on just about anything else.
1-1/2 c. mayonnaise
1 whole garlic head, roasted, cloves squeezed out of their skins
1 t. ground cumin (preferably from toasted cumin seeds)
1 T. chopped chipotle chiles in adobo sauce (add more chipotle if you like it hot)
Whiz all ingredients in a food processor until thoroughly combined. Spread liberally on your burger buns before adding burgers.
